A night with Coquito is a good night



So one night I am enjoying the company of some friends and we are playing games and having a good time. We are playing XBOX connect. We chose to get a drink and have some snacks. One of my friends brings a drink called Coquito. It was so good. I asked her what was in it but she wouldn’t tell me. Coquito is normally served around Christmas holiday. It is a Spanish drink some say it is Dominican and others say it is a Puerto Rican drink, never-the-less it is a good drink lol. So I went to my Dominican friends to get the recipe and it was funny because they all drink it but they had to ask older family members to learn how to make it. So we decided to make the drink together. I had another get together and we made the drink Coquito. Here’s how we did it.

  • 2 15-ounce cans of creamof coconut
  • 2 14-ounce cans of condensed milk
  • 6 ounces white rum (use less if you like)
  • 1/4 teaspoons ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/8 teaspoon of nutmeg
  • 1 teaspoon coconut or vanilla extract


Now that we have made the drink, we were told to let it sit in the freezer for at least 1 hour because it has to be served cold. The older Dominicans say that the drink taste totally different when it is warm or not cold. So after the hour passes we take it out the freezer and drink it and man-Oh-man it is good. 6 steps to Stuffed Peppers


So today my lil brother came to visit me and he wanted stuffed peppers. I asked him where he got the craving for stuffed peppers. He said he was in the store and saw it in the frozen section and wanted to know what it tastes like. I never had stuffed peppers so it should be fun to make it. The normal ingredients are ground beef, white rice, chopped onions, peppers and seasoning. I want to add my own taste to it so I am going to use yellow rice tomato soup red pepper flakes seasoning salt and lil bit of taco sauce.  
  1. I start with the ground beef and I put it in a pan with the chopped onions. I season the beef while it’s in the pan and let in simmer until its brown.
  2. While that’s going on I gut the peppers and put them in a pot with water and let it boil.
  3. I will put the tomato soup in the pan with the ground beef and the onions. I let that simmer and mix together.
  4. Add the rice and I use the Goya yellow rice because it has more flavor. When the rice cooks in the sauce and meat I take it out the pan and I place one pepper on a plate
  5. I then fill the pepper with the meat sauce and rice and I also put some around the pepper on the plate.
  6. I add some shredded cheese on top if the pepper and let it melt into the sauce and the meat.




Making stuffed peppers isn’t as hard as I thought it was going to be. My little brother said it was good. I have to say that using fresh peppers are very important because it has to stay firm when you put the food in it, for it to be my first time making this, it turned out great. My lil brother said, “Mike you put your foot in this one.”

Bacon Egg and Cheese-Cheese burger


So today I was hungry and I wanted breakfast but I also had the taste for a burger. So I had a bright idea to make a breakfast burger. I know this may seem weird but I had to have it. I had a craving for an bacon egg and cheese sandwich. That was the breakfast meal I had in mind. So the burger would be a bacon egg and cheese, cheeseburger. I know it sounds crazy, right? So now I am thinking, I like my eggs scrambled but I don’t want to put scrambled eggs on the burger just didn’t seem right. So I made the eggs fried and baked the bacon. Before I get into the burger too much let me tell you what kind of food I bought. I like the Shop-Rite brand burgers and the maple bacon made by Oscars-Meyer. I got a sesame seed bun from shop-rite as well. The burger I let cook in a pan. I know most people use the George Foreman grill but I like the pan and I put syrup in it. It gives the burger a sweet taste.  I put the bacon in the oven first because that will take the longest. Then I make the eggs while the burger is frying, the eggs don’t take long. When everything is just about done I put the bun in the oven for about 1 min and then I put the burger on the bun along with the fried egg and the bacon. I add a slice of cheese as well. I place a little lettuce in there to make it a deluxe burger. The results were amazing the burger I had was so good. I know this is a weird combination but try it before you knock it.

Why Do You Cook?


The natural and most common answer to this question is because I am hungry. In most cases you cook to feed your stomach, but as I have grown to learn many people cook for many different reasons. I have a friend that bakes cakes for a living and she is great at it. She loves to cook and I asked her why do you cook so much, don’t you get tired of it? She said, “No I cook because it makes me happy, and it calms me after a long day.” That seemed off to me because I didn’t understand how she felt so I did a little research and I found that there are many people that cook to calm there nerves. They make different things that match their emotion. I guess that’s like people that are angry, stressed and frustrated tend to eat candy and pizza (typical college students). People call this “Head Hunger.”


Then there are “Heart Hunger’ foods like ice cream and pasta or desserts. They are usually eaten out of boredom, loneliness, anxiety and depression. The late night snack (men)! My boyfriend didn’t called or we broke up snack (women). Ok that was a JOKE, but it has some truth lol. Some say the joy of filling other peoples stomach makes them feel good. I guess it’s like a comedian saying that he gets fulfillment out of making people laugh.



Food fills my stomach and I like to eat but I guess this is how my mom felt cooking for me. So if cooking makes you happy fire away lol. Post a comment and let me know why you cook.

Wiki



I really didn't think that it would be this easy to change a post on Wiki. That really makes me understand why teachers and professors make students in school keep away from it. It was as simple as coping and pasting a document. I think that the overall idea behind it was good but the integrity of the website needs to be evaluated.

Fried Chicken and Rice



I will be starting with something simple, Fried Chicken Wings and Rice. I am a black man and I was raised eating fried chicken, so I really need to learn how to master this recipe. Where and what type of chicken wings you get are up to you. The first thing I need is the seasoning. Lowry’s Seasoning Salt, Garlic Powder, Salt and Pepper.  I then place the wings on a cooking sheet and start seasoning the wings with the Lowry’s. I continue to spread each of the seasoning over the chicken evenly on both sides of the wings. Now my mom always let the chicken sit in the seasoning while she put the grease in the pot and let it get hot. I will do the same. While the chicken marinates in the seasoning and the grease gets hot I will be bangin' music, you can’t cook or drink without some tunes.  Now I like my chicken crunchy so I get a bag of flour (pour flour into a plastic bag) and then I drop a couple pieces of chicken in the bag and I shake it up. Next place the chicken in the pan and don’t drop it in or the grease will pop up and burn you, yes I have been burnt watching before lmao. Now my mom would always say that you let the chicken cook until it stops screaming lol (the noise from the chicken settles down then its time to flip it). Then when that side stops screaming the chicken should be brown and crispy not burnt but crispy. Now I am part of the new age cooking not, everything has to be made from scratch so the rice that I will put with it is cheddar broccoli. Its the Knorrs brand and it comes in a bag. It takes 7 minutes to cook all you need is a pot, 2 cups of water, a tablespoon of butter is optional but I use it and let it boil, make sure you stir while the rice is boiling and in 7 min. you have some good food lol.

Intro


I'm not the best cook but, I'm far from the worst. My mom taught me well, but I can never learn enough. My blog is a dedicated to her. She loved to wine and dine in the kitchen "her words not mine." I invite all to post different recipes and drink combinations so I can become a better cook and hopefully you can learn some new and different recipes and I can cook through them.
